MEET RYAN JOSTEN - TASTEROOM MANAGER & HEAD CHEF
In this installment of our Meet the #DBcrew series, we're proud to introduce Ryan Josten, Tasteroom Manager and Head Chef at Darling Brew since 2019.
"I grew up in South Africa and developed an interest in food and cooking while I was still at school. Travels during my gap year after Matric cemented my decision to become a chef and upon my return to Cape Town, I completed an international cookery diploma through the Culinary Academy," says Ryan.
"I initially worked under various international chefs at The Five Flies Restaurant, the Relaix and Chateau, Cellars Hohenort, Singita, and then the Cape Grace. I furthered my experience abroad in Scotland by working under Albert Roux and Tom Lewis. This is where my love of using fresh and seasonal produce was fostered."
Back in South Africa, Ryan opened his own bistro in McGregor, Western Cape, called Karoux Restaurant. This eatery took home the Eat Out Awards for “Best Bistro Western Cape 2016” and “Best Country Style Restaurant 2017”, along with many other accolades. After this, Ryan's love of travel, people, and new experiences led him to the yachting industry.
Until one fateful Monday morning in 2019, when he received a call from Darling Brew MD, Tewie Roos.
"He had heard of me somehow and offered me the position of Tasteroom Manager and Head Chef at Darling Brew. As a chef, I have always loved the association of a great beer with food, burgers, sticky wings, etc. so jumped at the opportunity," Ryan enthuses.
This passionate chef lives in the West Coast hamlet of Darling these days and takes great pride in being a part of the Darling Brew team.
"I can sincerely say that I love working here. It's such a dynamic environment and team to work with. We work hard and always strive to be leaders in the market. Innovation is at the core of every choice we make."
As for his favourite Darling Brew Beer, Ryan likes to change things up with the season (much in the same way as he does with his cooking). In summer he loves a 4x4 BraaiPA, in spring he enjoys a Long Claw, autumn endears him to the Warlord, and in wintertime, a Black Mist hits all the right spots. As an everyday go-to, he normally reaches for a Slow Beer.
When this talented foodie is not cooking at the Darling Brew Tasteroom, he likes to do so at home, using fresh produce from his carefully tended vegetable garden. He also ventures to the Mother City quite often, to visit other taprooms and see what the competition is up to...
